Severn & Wye Smoked Salmon
Severn & Wye has been our go-to smoked salmon supplier since we first opened in 2014, and it remains our most popular smoked salmon for very good reason. It is beautifully made, consistently reliable and has that lovely balance of clean salmon flavour and gentle smoke that makes it incredibly easy to enjoy. Based between the Rivers Severn and Wye on the edge of the Royal Forest of Dean, Severn & Wye still works in a very traditional way. Their Atlantic salmon is graded, filleted, cured and largely cut by hand, before being smoked over oak wood that they chip themselves. The result is a well-balanced, classic smoked salmon that works just as happily on a breakfast table as it does on a Christmas platter. Our packs are long sliced, which simply means the salmon is cut lengthways rather than across the fillet, giving you those elegant longer slices that look especially good laid out on a platter, folded onto blinis or piled generously onto good bread with lemon. Did you know… Smoking fish began as a practical way of preserving it long before refrigeration. Over time, necessity turned into craft, and the choice of wood became part of the flavour. Oak has long been one of Britain’s classic smoking woods and gives a clean, rounded smokiness without overpowering the fish.
