Our salmon comes from the exceptional team at Wester Ross in the north-west Highlands of Scotland and, quite simply, we believe it's the finest farmed salmon available in the UK.

Favoured by Michelin-starred chefs and celebrated by food writers, Wester Ross salmon is renowned for its sweet, buttery flavour, delicate texture and beautiful appearance. The flesh is firm but succulent, with a richness that makes it equally suited to simple suppers and special occasions.

The fish are grown slowly in the cool waters of the Scottish Highlands, allowing them to develop exceptional flavour and texture. Great care is taken at every stage of production, from the selection of feed through to harvesting and processing.

Did You Know?
Wester Ross do not use antibiotics on their salmon or anti-foulants on their sea pens. The distinctive pink colour of salmon comes from naturally occurring pigments called carotenoids. In the wild, salmon obtain these pigments by feeding on crustaceans such as krill and shrimp. One of the most important of these pigments is astaxanthin, a powerful antioxidant that plays a vital role in the health and wellbeing of the fish. It supports growth, muscle development and overall health, with the familiar pink colour simply being a natural result of a salmon's diet. The astaxanthin used in Wester Ross feed comes from natural sources, helping to produce healthy fish with the beautiful colour consumers naturally expect from premium salmon.

Salmon are remarkably efficient at converting feed into body weight. The bespoke feed used by Wester Ross contains marine ingredients derived from fish already harvested for the human food chain. Rather than relying on whole fish caught specifically for feed production, much of the fishmeal and fish oil is produced from trimmings and by-products generated during seafood processing.

It's a sensible use of a valuable natural resource and one of the reasons Wester Ross achieves one of the lowest feed conversion ratios in the industry and why they have earned such a strong reputation amongst chefs, fishmongers and seafood lovers alike.

Proof that great salmon starts long before it reaches the fish counter.

One of the reasons we love salmon so much is its versatility. Whether you're feeding the family on a Tuesday night or entertaining at the weekend, it's a fish that rarely disappoints.

For a simple supper, roast a salmon fillet in a hot oven with a little olive oil, sea salt and black pepper until just cooked. The flesh should still be moist and slightly translucent in the centre.

Salmon is equally delicious pan-fried. Cook skin-side down for most of the cooking time until the skin is crisp, then briefly turn and finish on the flesh side.

The rich flavour pairs beautifully with everything from buttery new potatoes and seasonal vegetables to Asian-inspired marinades, salads and grain dishes.

Our favourite way to enjoy it? Keep things simple. Good salmon needs very little more than lemon, fresh herbs and a knob of butter.
