Cooking tips

A fantastic stock adds depth of flavour to your favourite shellfish dishes. For best results we suggest roasting your shells first to enhance the flavour, although this step is optional. Then, in a deep saucepan add a knob of butter, your shells, a selection of vegetables, white wine and water to make the staples of a delicious stock. Just make sure to keep it on the simmer - do not boil!
