Despite the name, lemon sole isn’t a ‘true’ sole at all, it’s a flat fish! But what it lacks in technical classification, it more than makes up for in flavour.

Lemon sole is delicate and naturally sweet, with a soft, fine flake and a more tender texture than Dover sole. It doesn’t have the same firmness, but that’s part of its charm. When cooked gently on the bone, the flesh lifts away beautifully and retains a lovely, moist finish.

Our larger lemons are a perfect size for two to share and are wonderfully versatile - superb simply grilled whole with butter and capers, or carefully filleted for a more refined presentation.

This is an understated, elegant fish that delivers quiet luxury without the Dover price tag.

Lemon sole gets its name from the lemon-shaped marking near its head... not from any citrus flavour. Like megrim and witch, it’s a flat fish rather than a true sole, but it remains one of the most consistently delicious fish we land around the UK and is highly prized by chefs and home cooks alike

Lemon Sole is prized for its delicate texture and subtle, sweet flavour, so simple cooking is always the best approach. The fillets are wonderful lightly dusted in flour and pan-fried in butter until golden, then finished with a squeeze of lemon and a handful of fresh parsley. It's a classic fish supper for a reason.

Whole Lemon Sole can also be roasted on the bone, allowing the flesh to remain beautifully moist and making it easy to lift away from the skeleton once cooked.

If you're feeling indulgent, follow the lead of many great chefs and don't be shy with the butter. Capers, brown shrimp, samphire and new potatoes all make wonderful accompaniments.

The flesh cooks quickly, so take care not to overcook it... a few minutes is usually all that's needed.
