Chalkstream Farm is situated on the rivers Test and Itchen. The fish is slow grown for 2 years. Because of the 'gin clear' waters found naturally in a chalk stream river, the fish are lean with a unique clean taste. These are larger fish than our Rainbow Trout, each one around 3 kilos each, so the portions are lovely and thick
