Cuttlefish are regularly available, but sizes vary considerably from day to day. If you'd like to order some, please get in touch and we'll let you know what's been landed.

A close relative of squid, cuttlefish is hugely popular throughout the Mediterranean, where it's celebrated for its sweet flavour and wonderfully tender texture.

Around the UK coast, cuttlefish are particularly prized by fishermen and chefs alike. During the season, many South Coast vessels switch their gear specifically to target these remarkable creatures, affectionately known as 'Black Gold thanks to the valuable ink they carry. Huge volumes are landed into Brixham throughout the year

The flesh is slightly thicker and meatier than squid, making it incredibly versatile. It's delicious grilled over charcoal, gently braised in rich tomato sauces, or sliced into ribbons and quickly stir-fried. The ink can even be used to create dramatic black risottos, pasta dishes and sauces.

Landings vary enormously, and a cuttlefish might weigh anything from 200g to well over 2kg, so the size available will depend entirely on the day's catch.

Cleaning cuttlefish at home can be a wonderfully messy affair, so we'd strongly recommend letting us do the hard work for you. We'll prepare it ready for the pan, grill or barbecue, leaving you to enjoy all the delicious bits and none of the inky ones.

One of the Mediterranean's best-kept secrets and a firm favourite with seafood lovers who know just how good it can be.

Like squid, cuttlefish is best cooked one of two ways - either very quickly over a high heat or slowly and gently to allow the texture to soften.

For a simple and utterly delicious starter, slice the prepared cuttle into strips, marinate for an hour in a little olive oil, garlic and fresh herbs, then cook in a smoking-hot pan for around 30 seconds on each side. Finish with a squeeze of lemon and a pinch of sea salt and serve immediately.

If you prefer a slower approach, cuttlefish is wonderful in Mediterranean-style stews, braises and pasta dishes, where a longer, gentler cook transforms it into something beautifully tender.

Allow around 400g of whole cuttlefish per person - remember you will lose over half this weight when its cleaned. The size of cuttle landed will determine the weight of the fish we have available.
