Gurnard are generally available throughout the year, but because landings and sizes vary considerably, we're don't take online orders. We'd rather you didn't pay in advance if prices change or we need to adjust the weight slightly. With their oversized heads, bright colours and wing-like fins, Gurnard are certainly one of the more unusual-looking fish on our counter. Sometimes known as Sea Robins, they might not win any beauty contests, but they're absolutely delicious.

Gurnard have a wonderfully firm texture and a rich, distinctive flavour that makes them a favourite with chefs and fish lovers alike. They're incredibly versatile and are just as happy on the barbecue as they are roasted whole in the oven or simply pan-fried as fillets.

Several species are landed around the South West coast. Red Gurnard and Rock Gurnard are typically smaller fish, often weighing between 400g and 800g, while the impressive Tub Gurnard can grow to well over 2kg.

They're also one of the finest fish for making stocks and soups, which is why you'll often find them in traditional Mediterranean fish dishes such as Bouillabaisse.

If you've never tried Gurnard before, we'd strongly recommend adding it to your seafood wish list.

They may look a little strange, but one taste and you'll understand why they're such a fishmonger's favourite.

Did you know...
Gurnard can actually 'grunt' by vibrating muscles around their swim bladder which is where their name comes from. They're one of the few fish that can make an audible noise out of the water.

Gurnard is wonderfully forgiving to cook thanks to its firm texture and rich flavour.

Smaller fish are fantastic roasted whole or cooked on the barbecue, while larger fish can be filleted and pan-fried until the skin is crisp and golden.

The flesh works beautifully with Mediterranean flavours such as tomatoes, olives, garlic and fresh herbs, but it's equally delicious served simply with butter, lemon and a handful of parsley.

Because the flesh holds together so well, Gurnard is also excellent in curries, fish stews and seafood soups.

One of the most versatile fish on the counter and a favourite amongst chefs for good reason.
