We've always sold more Hake than Cod.

Over the years, our customers have come to trust us when we recommend a species and Hake has become one of the true success stories of The Fish Shop. Caught by Cornish gill-netters, the quality of the fish is exceptional. Hake is a delicate species that requires careful handling from the moment it's landed, but when treated properly the results are spectacular. The flesh is beautifully white with large flakes, a clean flavour and a texture that sits somewhere between Cod and Haddock.

Much of our Hake arrives from Newlyn and Brixham, where generations of fishermen have perfected the art of catching and handling these wonderful fish.

Availability can sometimes become challenging during the spring months when weather and fishing patterns affect landings. When that happens, we simply wait. We won't buy Hake from elsewhere just to fill the counter. We'd rather have no Hake than compromise on quality.

Smaller fish are expertly filleted and pin-boned by #TeamFish, whilst the very largest fish are often cut into premium loins and steaks. If you've never tried Hake before, you're missing one of the finest fish landed around our coast.

Hake were once considered an undervalued species in the UK and much of the catch was exported to Spain, where they have long been regarded as one of the country's favourite fish. Today, British consumers are finally discovering what Spanish chefs have known for generations - Hake is a magnificent eating fish.

The scientific name Merluccius merluccius is wonderfully repetitive and translates simply to 'European Hake'. Sometimes scientists aren't nearly as imaginative as fishmongers.

One of the best fish in the sea and still one of Britain's best-kept secrets.

If there's one chef we associate with Hake, it's Jon Fell. His passion for the species shines through in his cooking and many of his recipes have become firm favourites in our kitchen.

Check out our recipe section for a few hake recipes - but this one is our favourite - Hake with Chorizo and Potatoes. It's everything we love about simple seafood cooking. The smoky richness of the chorizo flavours the potatoes and cooking liquor, while the Hake gently steams on top, remaining beautifully moist and flaky.

It's the sort of dish that's perfect for sharing around the table with a bottle of wine and some crusty bread to mop up every last drop of the sauce.
