Lumpfish Roe makes a great alternative to genuine caviar, especially if you're on a budget and need to make it stretch to feed lots of guests. Slightly smaller spheres than Siberian Sturgeon, Oscietra or Beluga, its still a great option for many sauces or to garnish canapés or sushi. it has a nice level of saltiness and good 'pop'
