Samphire is the perfect accompaniment for fish and shellfish. Super salty it marries well with any seafood. More a garnish than a 'veg', allow around 50g per person
Although its super salty, cooking in a little salty butter makes it even more 'moorish'. Heat a little butter ina pan until it starts to foam, add the samphire for a minute or so, then serve with the fish of your choise
