Our beautiful ChalkStream Trout are raised in the crystal-clear waters of Hampshire and typically weigh between 2.5-3kg, making them perfect for sharing with family and friends. Each fish is expertly prepared by #TeamFish, stuffed with fragrant herbs and fresh lemon before being generously coated in our legendary Super Garlicky marinade.

As the trout cooks, the garlic, herbs and citrus combine with the naturally rich flesh of the fish to create an incredible aroma and flavour. The result is a wonderfully moist fish that's as impressive to serve as it is to eat.

Whether cooked in the oven or over the coals on a barbecue, this is the sort of dish that gets carried to the table with a little ceremony. Suitable for entertaining, celebrations and anyone who believes dinner should occasionally be an event.

Scientists believe this helps them navigate, find food and even recognise the streams and rivers where they originated. It's a remarkably sophisticated skill for a fish and one of the reasons trout are such successful predators.

Oven
Preheat your oven to 180°C Fan.

Place the trout onto a baking tray and cook for approximately 28-30 minutes, depending on the size of the fish.

Barbecue
For best results, place the trout onto a large sheet of foil and cook over a medium barbecue with the lid closed where possible. Alternatively, use a fish basket if you're feeling confident.

Cooking times will vary depending on the temperature of your barbecue.

The Secret Weapon - invest in a simple meat thermometer. Insert the probe into the thickest part of the fish and cook until it reaches 66°C. You'll never have to guess whether your fish is cooked again.

Serving Suggestions
Perfect served with roasted new potatoes, grilled vegetables and a crisp green salad.

A bowl of garlicky buttered Jersey Royals and a chilled glass of white wine wouldn't go amiss either.

Don't forget to spoon over all those delicious garlicky cooking juices.
