It an absolute joy to have the opportunity to handle some of the most stunning fish on the planet, and every single day we are delighted with our deliveries. It’s like opening gifts on Christmas morning; we’re all so excited to see ‘what’s in the box’.
With the exception of our ‘Sashimi Grade’ Tuna and Swordfish ALL, our ‘fresh fish’ is… FRESH! Predominantly wild-caught and landed in Newlyn, we pride ourselves on buying the best of the days catch, and that’s what we sell. If a species hasn’t been landed, because it’s out of season or the fishermen simply didn’t manage to hunt it down, then we’d rather go without than try to source from elsewhere. This means that you can always be sure that if it’s on the counter it’s going to be utterly delicious. It also means that if you would like to keep our fish for more than 2 days, you can always pop it into your freezer.
Some of the delicious Wild Caught fish you will see probably find on our counters
Hake, Cod, Haddock, Halibut, Pollack, Whiting, Monkfish, Plaice, Lemon Sole, Dover Sole, Turbot, Brill, Sand Sole, Witch Sole, Megrim, Dabs, Skate (Ray) & John Dory. Bass, Mackerel, Sardines, Gurnard, Red Mullet, Red Bream, Couches Bream, Gilt Head Bream, Black Bream, Grey Mullet, Dogfish (Huss/Rock) Conger Eel, Sashimi Grade Yellow Fin Tuna, Squid.
As well as the wild-caught species, we also source superb farmed fish. Some people view farmed fish as somehow inferior, however if it is done really well the quality can be outstanding. It also plays a vital role in the seafood industry as it takes pressure of some of the wild caught species that are under threat.
We are very proud to source our Fresh Salmon from WesterRoss, hailed as the ‘Gold Standard’ in salmon farming. The fish is harvested to order and sent down overnight, we then fillet and pin-bone ready for the counter. The ban on Wild Scottish Salmon throughout the 2019 season meant that only farmed Salmon was available. We see this as hugely positive as it will enable the recovery of wild stocks and hopefully in years to come the fishery will be much more sustainable than it currently is.
