Lemon sole aren’t really ‘sole’, but they are a really delicious flat fish. Delicate, with a sweet flavour and not as firm as a Dover sole, lemons are truly delicious. Our large fish are a perfect size for 2 to share and cook beautifully either on the bone or as fillets.

This classic recipe works really well with lemon sole, and with most of James Martin’s recipes involves copious amounts of butter
