Our South Coast palourdes are absolutely delicious and perfect for spaghetti alla vongole. They’re best bought on the day you plan to cool them but do keep perfectly in the fridge overnight.

This is one of Sue’s mum’s recipes. Developed originally for a wine tasting event at their pub... The Fox at North Waltham, it became a firm favourite on their menu. It’s definitely worth a try
