Three beautiful little scallops, presented in a natural scallop shell and topped with our homemade 'Nduja Butter.

As the butter melts, it combines with the natural juices from the scallops to create the most incredible sauce - rich, savoury and gently spicy, with just enough warmth to enhance the sweetness of the shellfish without overpowering it.

Simple to cook and beautifully presented, these make an impressive starter, a luxurious light lunch or the perfect addition to a seafood feast.

Scallops have an extraordinary visual system and can possess up to 200 tiny blue eyes around the edge of their shell.

Unlike our eyes, which use a lens to focus light, scallop eyes contain tiny mirrors that reflect light onto two separate retinas, allowing them to detect movement and changes in light remarkably well. Scientists are still studying exactly how these fascinating eyes work.

Not bad for a shellfish - beautiful on the plate and surprisingly sophisticated beneath the waves.

Preheat your oven to 180°C Fan.

Place the scallop shells onto a baking tray and cook for approximately 6-8 minutes, until the butter is bubbling and the scallops are just cooked through.

Take care not to overcook them - scallops only need a short time in the oven.

Serving Suggestions
Perfect served with warm crusty bread to soak up every last drop of the delicious 'nduja butter.

For a starter, simply add a crisp green salad and a wedge of lemon. For maximum enjoyment, make sure nobody steals your shell.
