We're incredibly lucky to have one of Britain's finest trout farms just 40 minutes from the shop.

Our ChalkStream Trout is grown in the crystal-clear waters of the River Itchen in Hampshire, one of England's most famous chalk streams. Surrounded by beautiful countryside and historic mill buildings, the fish are carefully reared in flowing spring-fed water, creating trout with exceptional texture, flavour and appearance.

The larger fish we select have a wonderful firm texture and rich flavour, making them incredibly versatile. They're delicious roasted whole, pan-fried as fillets, gently cured or enjoyed as part of a sashimi platter.

The quality is outstanding and the provenance couldn't be much closer to home. For us, this is one of the finest examples of British aquaculture done properly.

Did You Know...?
Despite being one of Britain's most popular farmed fish, Rainbow Trout are not actually native to the UK.

Originally from North America, they were first introduced to Britain in the late 1800s and quickly proved well suited to life in our rivers and fish farms. Our native trout is the Brown Trout (Salmo trutta), a species that has inhabited British rivers and streams for thousands of years.

Today, Rainbow Trout remain almost exclusively a farmed fish in the UK, where carefully managed farms produce some truly exceptional fish.

An American visitor that made itself very much at home.

If you already have a favourite salmon recipe, chances are it will work beautifully with ChalkStream Trout.

For something simple, pan-fry the fillets in a little oil with a sprinkle of sea salt and a few fresh herbs such as lemon thyme or rosemary. The skin crisps beautifully, while the flesh remains moist and delicate.

Serve with buttery new potatoes, seasonal vegetables or a simple salad and let the quality of the fish shine through.

Like salmon, trout is wonderfully versatile, but often the simplest preparations are the most rewarding.

Beautiful fish doesn't need much dressing up.
