That's it, our Christmas preparations are now well underway!!

Our Order Book has closed for 2024 and #TeamFish will be pulling everything together to prepare for another busy Christmas and New Year. Chalkstream Farm is situated on the rivers Test and Itchen. The fish is slow grown for 2 years. Because of the 'gin clear' waters found naturally in a chalk stream river, the fish are lean with a unique clean taste. These are larger fish than our Rainbow Trout, each one around 3 kilos each, so the portions are lovely and thick

Follow any recipe for salmon, or simply pan fry the fillets in a little oil with come sea salt and herbs such as lemon thyme and rosemary

Allow 200g per person for a generous portion
