There have been huge price drops across the board with fishermen catching big volumes on Wild Bass, Wild Bream, all the flat fish and lots more. One of the most famous restaurants in Touquet, Perard's is well known for its delicious fish soup that its creator, Serge Perard, designed in the 1960s and which can be enjoyed in the comfort of your own home.

The fish soup is superb, simply warm up gently in a saucepan and serve with a dollop of rouille, some grated Emmental and a few croutons,

If you want to create a 'cheat's' Bouillabaisse, use this soup as your base and add some fresh fish and shellfish... no one will ever know
