Not everything needs to be fresh to be fabulous and some things simply can’t be. Take prawns. The UK has a tiny prawn fishery, and although our native species are delicious, they’re smaller, very seasonal and very hard to come by . The larger warm water prawns that everyone loves - Kings and Tigers - come predominantly from Asia and South America. Cold water prawns come from the far north, Iceland and Canada. There is simply no realistic way for these products to travel across continents without being frozen. In fact, almost all prawns sold in the UK have been frozen at some stage as it’s the only way to protect quality. Freezing on capture or harvest locks in freshness and allows them to be transported properly, without compromise. The same principle applies across much of this range. Some species freeze exceptionally well. Others are frozen at sea within hours of landing. Everything here has been chosen because freezing preserves it at its best.
