Our ChalkStream Trout is grown just 45 minutes from the shop in the crystal-clear waters of the River Itchen and is one of the finest trout products available in the UK.

For our sashimi range, the trout is handled, prepared and stored separately from our fish counter products, allowing it to be enjoyed raw without cooking.

With its vibrant colour, delicate texture and clean flavour, ChalkStream Trout is a wonderful alternative to salmon and makes a beautiful addition to any sushi or sashimi platter. The flavour is slightly sweeter and more delicate than salmon, with a wonderfully fresh finish.

To make preparation at home as easy as possible, we'll remove the skin for you, leaving the fish ready to slice to your preferred thickness.

A chalkstream is one of the rarest river habitats in the world. Around 85% of the world's chalkstreams are found in England, with Hampshire's River Itchen regarded as one of the finest examples.

The naturally filtered water emerges from underground chalk aquifers at a constant temperature throughout the year, creating ideal conditions for growing exceptional trout.
