This makes the quickest and most delicious meal...

Add the paste to a 400ml tin of coconut milk and a teaspoon of palm sugar (optional)
Heat, stirring the paste in to the milk until hot.
Add your fish - we recommend skinless cubed hake, monkfish and some large raw peeled prawns, allow around 200g of fish per person
Allow to cook for around 4 minutes - you can then add some tender stem brocolli or mange tout and cook for a further 3-4 mins
Serve over basmati rice
