One of our most colourful kebabs and a real summer favourite.

Chunks of Cornish Monkfish are coated in a vibrant Thai-inspired marinade packed with fragrant spices and herbs including lemongrass, coriander, ginger and cumin. A gentle warmth from chilli is balanced by fresh citrus notes and aromatic herbs, creating a beautifully rounded flavour that works perfectly with the firm, meaty texture of Monkfish.

The bright yellow colour comes from turmeric and spices, making these kebabs look every bit as good as they taste on the barbecue.

Monkfish is one of the best fish for kebabs, holding its shape beautifully during cooking whilst absorbing all the wonderful flavours of the marinade.

Serve with rice, a crunchy Asian-style slaw or simply alongside a fresh summer salad.

Closing the lid on a barbecue turns it into an outdoor oven, helping fish cook more evenly and reducing flare-ups.

Cook over a medium-high barbecue for around 4-5 minutes, turning regularly to ensure an even cook. For best results, place the kebabs on a small sheet of foil with a raised edge to catch all the delicious juices released during cooking.

Also fantastic cooked under the grill or in a hot oven.
