The premium cut of the nation's favourite fish. Cod loins are taken from the thickest part of the fillet, producing beautifully chunky, completely boneless portions with large flakes and a wonderfully delicate flavour.

Our large Cod sides arrive fresh each morning before being expertly filleted, trimmed and pin-boned by #TeamFish. We then select the very best and thickest sections to create our premium loins, ensuring every portion delivers the texture and eating quality customers expect.

Their natural thickness makes Cod loins particularly forgiving to cook, helping them remain beautifully moist whether roasted, baked, pan-fried or used in your favourite white fish recipe.

Much of our supply comes through Newlyn, although when conditions dictate we will occasionally source exceptional Cod from other parts of the UK, including Shetland, ensuring our customers continue to receive the quality they expect.

The large flakes that make Cod so popular are created by the structure of the muscle itself. As Cod cooks, the flesh naturally separates into distinctive pearly white flakes, creating the texture that generations of fish lovers have come to know and love.

The thick loin section produces the largest flakes of all, which is one of the reasons chefs often choose loins when presentation is particularly important. It's a simple difference, but one that turns a good piece of fish into something truly special.

Mediterranean Lemon & Garlic Cod

We love simple recipes that deliver big flavours and this Mediterranean-inspired Cod dish ticks every box.

You'll Need
1 chunky Cod loin per person
Plain flour
Ground coriander
Ground cumin
Sweet paprika
Sea salt and black pepper
Lemon juice
Olive oil
Melted butter
Plenty of garlic
Method

In one bowl, mix the flour with a little ground coriander, cumin, sweet paprika, salt and pepper.

In a second bowl, combine equal quantities of lemon juice, olive oil and melted butter to create a wonderfully zesty marinade.

Dip the Cod into the lemon mixture, then coat thoroughly in the seasoned flour.

Heat a little oil in a frying pan and cook the fish for a couple of minutes on each side until lightly golden.

Transfer to an ovenproof dish, drizzle over any remaining lemon mixture, scatter generously with garlic and bake at 180°C for around 10-12 minutes until the fish is perfectly cooked.

Serve with roasted vegetables, a crisp salad or some buttery new potatoes.

Simple ingredients, huge flavour and a wonderful way to enjoy a beautiful piece of Cod.
