Not necessarily to everyone's taste, salmon heads are actually highly prized by many.

Taken from our large 4-5kg WesterRoss salmon, we never seem to have enough of these to go round. Hugely popular in many cultures, fish heads and especially salmon heads can be roasted or used in soups

We remove the gills for you, but there is a good amount of meat around the collar and back of the neck
