Surf clams or Hokkigai are a really colourful addition to sushi platters, and are perfect thinly sliced over nigiri. These are from Canada and are prepared and blast frozen to ensure they are safe to eat without the need to cook. They can be cooked, but only for a few seconds as overcooking will toughen them up.
