Few seafood species are as versatile as squid. Whether it's quickly grilled, lightly fried, stuffed and roasted, or added to a seafood stew, good squid is wonderfully delicate, sweet and incredibly easy to cook.

Throughout the year we source squid from around the South Coast, but when the Cornish fleet start landing hook-caught (jigged) squid, that's when we see the very best of the season. These spectacular fish are caught individually on specialised squid jigs, producing exceptional quality and remarkably fresh, pristine squid.

The size of squid landed can vary enormously. On any given day they may weigh anything from 200g to well over 1kg each, although our favourite size is usually between 300g and 500g. They're beautifully tender, easy to prepare and perfect for everything from crispy calamari to the barbecue.

Because the size varies so much from day to day, the number of squid supplied may differ in order to achieve the weight you've ordered.

Whether you're a seasoned seafood enthusiast or trying it for the first time, fresh squid is one of the most rewarding species to cook at home.

Simple, versatile and utterly delicious, fresh squid is a seafood lover's secret weapon.

Like cuttlefish, squid is best cooked very quickly over a high heat or slowly and gently.

For a simple Mediterranean-style starter, score the tubes, brush with olive oil and cook in a smoking-hot pan or on the barbecue for just a minute or two. Finish with lemon, sea salt and fresh parsley.

Alternatively, slow-cook larger squid in tomato-based sauces, stews or pasta dishes where the flesh becomes beautifully tender and absorbs all those wonderful flavours.

The one thing to avoid is cooking squid for too long at a medium temperature, that's when it becomes chewy.

Quick or slow... never in-between!

Allow around 250-300g of whole squid per person as this will give you about 150g of edible meat. REMEMBER... if you ask for it to be cleaned, you will lose around 50% of the original weight.
