Sand Sole have earned a loyal following amongst our customers over the years and are one of those species that people tend to buy again and again once they've discovered them.

Delicate, sweet and beautifully textured, these elegant little flatfish are one of the hidden gems of the South West coast. Most fish weigh around 300-400g each, making them the perfect portion for one.

Despite their modest size, Sand Sole deliver wonderful flavour and are a fantastic example of why some of the lesser-known species deserve far more attention than they receive.

We'd always recommend cooking them on the bone, where the flesh remains beautifully moist and develops even more flavour. However, if you'd prefer them filleted, we're happy to prepare them for you.

For those willing to venture beyond the familiar, Sand Sole are a real treat and one of the reasons independent fishmongers are such wonderful places to discover something new.

Did You Know...
Sand Sole are probably the fish most often mistaken for Dover Sole. They belong to the same family and have a remarkably similar appearance, although Sand Sole are generally smaller and a little more delicate in flavour.

Like many flatfish, they spend much of their lives lying on sandy seabeds, where their colouring provides excellent camouflage against predators.

Despite being highly regarded by fishmongers and chefs, Sand Sole remain relatively unknown outside specialist seafood circles, which means those who discover them often feel they've found a hidden secret.

Proof that some of the best fish on the counter aren't always the most famous.

Most customers choose to have their Sand Sole filleted, and their delicate, sweet flesh is perfect for quick, simple cooking.

Lightly dust the fillets in seasoned flour and pan-fry in butter for a couple of minutes on each side until golden. Serve with a squeeze of lemon, some new potatoes and seasonal vegetables for an effortless supper.

If you'd prefer to enjoy the fish on the bone, Sand Sole are also wonderful roasted whole with a little olive oil, lemon and fresh herbs. The flesh remains beautifully moist and lifts easily from the skeleton once cooked.

Their delicate flavour pairs beautifully with brown shrimp, samphire, capers and simple buttery sauces.

Whatever method you choose, avoid overcooking... Sand Sole only need a few minutes and are at their best when treated gently.
