Lobster tails are always taken from a spiny or rock lobster. These lobsters are clawless and have the long antennae, so they are perfect to use for their tails. Our lobster tails are always frozen, around 125g each in the shell and uncooked. They're easy to remove from the shell to use in a variety of different recipes
Cooking tips
They're fabulous simply split open and drizzled with garlicky butter or marinade. Also brilliant in lobster risottos if you don't fancy using a freshly cooked Cornish Lobster
