Caught in the Atlantic by Irish fishermen, albacore is a beautiful premium tuna, prized for its pale flesh, delicate flavour and wonderfully tender texture. It is quite different from the everyday tinned tuna most of us grew up with.

Shines are a family seafood business based in Killybegs, County Donegal, one of Ireland’s great fishing ports, and their wild albacore tuna is prepared simply and preserved in olive oil, allowing the quality of the fish to do all the talking.

Open the jar and you’ll find generous pieces of tuna rather than anonymous little flakes. Rich enough to eat straight from the jar, fabulous through a salad or pasta, piled onto crusty bread or served simply with good tomatoes, olives and a squeeze of lemon.

A store-cupboard tin of tuna this most definitely is not.
