These are properly good tinned mussels.
Rope-grown mussels from Lyme Bay are steamed, then lightly fried before being preserved in a delicate escabeche of vinegar, paprika and sunflower oil. Each mussel is then carefully laid into the tin by hand – a lovely example of the traditional Spanish way of preserving exceptional seafood.
The escabeche is deliberately light; gently tangy with a touch of paprika, it complements the sweet, plump mussels rather than overpowering them.
Completely ready to eat, they’re fabulous simply tipped into a dish with some good crusty bread to mop up the juices. Add them to a tapas spread, serve as a starter, or eat them straight from the tin – absolutely no cooking required.
And we particularly love that these start with British mussels from Lyme Bay, before heading to the artisan cannery in northern Spain where Rockfish have them prepared and packed.
